This happens with Uconnect 6.5 units as well.
1) make sure if there is an update you do it for your vehicle or have the dealer do it,
2) Do a factory reset for the settings to hold if you do an update yourself.
3) PLEASE, PLEASE...contact Jeep about this...we NEED everyone who is having Uconnect issues to DOCUMENT, DOCUMENT, DOCUMENT.

I "officially" notified them yesterday of my Uconnect issues with holding settings that it controls in the car, one week ahead of an "official" visit to my dealer so it's documented at two places. You're not alone. The Uconnect product has flaws and needs to be corrected!
